“The staff is the heart and soul of our café. Each person contributes to their very best because they care, they are part of the family, they are part of this community. Two of our 3 partners live in Hintonburg because they have fallen in LOVE with the community. Our philosophy is very simple, having a positive impact, in the community that we serve, will leave a legacy that is greater than the size of our foot print. As a result, we sit on the Wellington West Business Improvement Area (BIA) Board and contribute to the local business advocacy initiatives. We often collaborate with various local businesses and community organizations. We are not merely selling products, we have become a home to so many families that come and stay because they enjoy the experience, the staff and the food.”

“The main challenge for me was sorting out how to make consistent, beautiful, good quality bread on a large scale. Before opening Nat's Bread Co I had only made maybe 10 loaves at a time in commercial kitchens. As soon as we opened the bakery, I was doing bread for all 3 of Stephen Beckta's restaurants, which put us at 60-80 loaves per night. It was a big adjustment with a lot of failed loaves!”
“I've always had a love of sweet treats since I can remember. It's hard to pinpoint when I actually started baking... My passion for food in general really started when I became vegetarian about 15 years ago. It forced me to start thinking about food in a different way. A few years later I became vegan and suddenly found that I couldn't eat pretty much any baked good! I had a choice….”
“Actually, it's been a long time dream... then an opportunity came up and I seized it. I wanted to created a small café where my two daugthers could have their first little job. I had read a book (fiction) about the life of a family growing up in Italy in 1950 or so. One of the character's name was Biscotti... I thought it sounded nice for a café :) ”
"Being vegan 8 years ago was extremely different than what it is now. And I also lived in an area where hunting and typical “meat and potatoes” was life. I was forced to learn how to cook.
