When did Flapjacks first open?
In 2013! A few freezing cold winters later and frostbite, but it was all worth it.
What was the experience going from a stationary food truck/shack to a sit-down diner?
It was a whole new animal, that’s for sure. Big learning curve. Everyday, we are still learning and always doing our best to improve and adapt as the environment around us changes! A learning curve indeed but a fun one at that!
What does being Canadian mean to you?
Everything. I am genuinely proud everyday to be a Canadian. And I am even more proud to contribute to identifying a Canadian culture, with Flapjack’s and building a Canadian Diner.
Canadian is the cuisine and overall theme. Is there a traditional Canadian meal that is healthy?
The word healthy, it has to be interpreted in different ways. Health for your organs and health for your mind. I consider all of Flapjack’s food healthy for the mind. Relax, enjoy delicious Canadian comfort food and your mind will be as healthy as can be hehe.

What percentage of your customers are lumberjacks?
All of them. The second they enter that front door, the transformation is instantaneous.
What Ottawa small business helped you in your journey with Flapjacks?
Mrs Tiggy Winkles, they rented us our first ever plot of land to have our Shack open its window to the city!
If you could teach some Canadian culture to an American by serving them one menu item, what would you serve them?
That would be the Classic, Big Joe Panwich. Three buttermilk pancakes, two eggs, bacon and cheddar cheese stacked high and served with real maple syrup. The ultimate Canadian sandwich. The Pancake Sandwich, Panwich.
Favourite cup of coffee?
Flapjack’s. I drink 8 a day, easy. Easy drinking, solid coffee.
What does Ottawa bring to your business?
Amazing people, community, excitement, tourism, everything a local business could ever wish for. I am blessed to call Ottawa home. I love this city.
How did the 150th Birthday Celebration impact Flapjacks?
It certainly drew tourists to the capital! So it was awesome getting to meet people from all over the world. The exposure it gave us was great! Allowing tourists from everywhere to try a classic Canadian meal.

I don’t drink, so I’d be sipping on pure Canadian Maple Syrup and chasing my maple syrup with Buttermilk pancakes, yeah that’s right.
